There are two ways of doing this. One would be to put the vacation cost on your credit card and pay it off, including the interest, over 12 months. Find a place on International Dr in Orlando that you can go through a time share. When you spend about 90 minutes of your time doing that, they usually give you park tickets for free. Try it! I've done it.

The Florida Everglades National Park/Biscayne National Park/Elliot Key Island.
I started out by camping at Flamingo Campground/Florida Everglades for 3 days. I rented a kayak and paddled the mangrove forest.
Then, at Biscayne. I took a boat over to Elliot Key Island from Biscayne and camped on the island for 3 days. There, I was able to snorkel the shallows and enjoy the coral reefs off of Elliot Key.
WARNING: If you snorkel. YOU MUST USE A RED DIVING FLAG. (A person was snorkeling without a diving flag while I was there and died because a boat did not see him) Walmart has/had a snorkeling kit for 20 bucks(flippers, mask & snorkel)
ALSO, I recommend doing the Everglades during the late winter/ early spring when the bugs and heat are not as bad.
AND FOR GAWD SAKE. DO NOT PLACE YOUR CHILD ON A ALLIGATORS BACK WHILE THEY ARE SUNNING ON THE ROAD. (true story – saw a tourist place his 4 year old son on a alligators back for a photo opprotunity.
Elliot Key only has access by boat or seaplane. There are NO stores on the island. SO, you have to pack in/out your food and water. Pack food in air tight containers. Racoons on Elliot Key are master thieves. I had my breakfast muffins tied up in a tree. The racoons still got them.
You're going to have a difficult time finding anything in that price range, even though it's the low, hurricane season in the Caribbean. The airfare alone would probably be more than that. Don't think you could even do the platform tent camping at Maho Bay or Cinnamon Bay in St. John USVI for that.
Best bet would probably be a travel agent who has package tours. CheapCaribbean.com sometimes has good deals – don't know how reliable they are. Also could check TravelZoo.com or VacationsToGo.com.
Perhaps Caye Caulker [Belize], Roatan [Honduras], Cozumel [Mexico] or Riviera Maya [Mexico] would have something more-affordable.
