You can only book all-inclusive vacation packages with Disney directly, or with a travel agent. You can book everything seperate and save a bit of money by buying park tickets at AAA or your local Disney Store and then booking your hotel and/or dining option with Disney directly.

If you are looking for a package that includes all three the only thing I can think of is going to a travel agent. If you want to eliminate the middle man and book the trip yourself, go straight to Disney.com or Universal. Each will let you book a trip. Your best bet is to stay on property at either Disney or Universal, you get more perks that way.
While I can't off the top of my head give you a specific hotel name, you need to know that there are MANY (established chain-type, reasonably priced, clean, safe) hotels (such as Holiday Inn, Days Inn) very close to Disney World. These hotels also offer Disney tickets in special combinations at very good prices available at the reception. The hotels also have a shuttle bus system to and from the Magic Kingdom usually included in the price of your room.
You really can get all you need starting at your hotel reception, so I'd stay away from these roadside "booths" plastered with posters offering special Disney deals. In our experience the hotel was always a better buy.
No one is too old for Disney World ( no, I don't work for them!)! We went when our daughter was 11-12 (we were just 50!) and it's hard to say who had more fun!

Disney ran two promotions in 2009… other than the Free Admission on your birthday, which was an all-year deal.
mid Jan – mid May was the Stay 4 Get 3 Free Promotion
mid Aug – mid Nov is the Free Dining Promotion
They will not offer anything for July… the summer months are some of their busiest times. Book the vacation, and if they announce a promotion and your vacation meets the promotion criteria they will apply that promotion (you have to call and ask). We got $1,300 back when they announced the Stay 4 Get 3 promotion… and that was back in Nov '08. If they are going to have a spring deal they should be announcing it soon.
Prices increase at Disney in Jan and Aug. Ticket prices do not fluctuate with the time of year… just the lodging.

The thing with Disney is that you are going to find pretty much the same prices no matter where you look. So, what I do, is look for service over price. Disney is not an in-expensive place to go, that is something that can't change. But there is a lot to do and it really is worth the money, you will have a great time.
Disney is HUGE. There is a ton to learn about it, if you have never been there, or it has been a while, then you will definitely want to use a travel agent. They will really help you to get the best possible vacation, for your money.
A lot of people say you can find better prices elsewhere and find the answers to your questions online. That really isn't true. For one thing, sites like Expedia, Orbitz, etc. are higher than Disney or a Travel Agent for Disney hotels. Not to mention there can be nightmares when you use these sites with your reservation, definitely something you want to avoid if you can. Furthermore, you really can't find all the answers to your questions online. My agent has been so great with all my trips, answering my questions, helping me to plan, etc. It is wonderful to have someone with so much knowledge so easily accessible. I really suggest looking into using an agent, you won't be sorry.
If you find the moderate and deluxe resorts to be a little over priced, you may want to look into a value resort. It will save you a little money, and you will still be in a nice Disney resort. I'm not going to say the Deluxes and Moderates aren't nice, because they all are. But if you want to save money, the value would be good to look into.
My favorite moderate is probably Coronado. It is a very nice resort. Even though it is a moderate resort, it feels a little like one of the deluxes. That is a popular resort for conferences, so it is a little more classy. Plus, the resort tends to be quieter since there are fewer children and mostly business people there. It is really nice.
I love all the deluxes, it is hard to choose just one. The Disney Vacation Club resorts are really great. I really like Saratoga. They are roomy and provide an all around nice stay. Yacht and Beach is probably one of my favorite resorts. I love that you can walk right to EPCOT and even MGM if you want. The resorts are beautiful, the area is beautiful, there is lots to do and you can take a boat right over to the Boardwalk. It is really nice.
Grand Floridian is nice. It is a very classy resort, not quite as laid back as some of the other resorts. But it is beautiful. Polynesian is another of my favorites. I love the atmosphere, it is really great.
You mentioned Animal Kingdom as well. The theming here is great. If you want to stay here, I would definitely upgrade to the Savannah view room. It is really worth the upgrade and makes staying the resort wonderful. Wilderness is also really great. It is the least expensive deluxe, but still very nice.
You really can't go wrong with a Disney resort, they are wonderful. The values can be a little noisy. More families stay there, as well as groups. So they tend to be really busy. The Movies and Pop are my choice for the values since they are a little newer.

Wet & Wild is fun! City Walk is a blast if u don't have kids to worry about. When you go to Universal make sure you get the express passes they SKIP the wait lines to almost EVERY ride and show in the park(s). If you wanna go to the beach there is Daytona, Cocoa within an hour on the west coast. DON'T fall for the Discovery Cove trap its VERY expensive & they don't GARANTEE any interaction. If you go down International drive there are a lot of great shops and some cool walk-through…Titanic Museum, and Ripley's. Hope That Helps!! Have Fun!
You two are going to have such an amazing time. My boyfriend and I have gone the past two summers in August. We love it so much! We book the expensive, all-inclusive packages and stay at Disney's Polynesian Resort and stay for a minimum of ten days. This past summer our trip cost nearly $10,000. It was so worth the money, I can't wait to go back this summer. There's so much for couples to do there. We have the most romantic time. We enjoyed fabulous dinners at a different restaurant each night. One night we went on a fireworks cruise. It was a lot of fun.
If you'd like you can book your flights through the Walt Disney World website. We wanted to book our flights with JetBlue this past summer, though, because the flights are only a few hours and they're direct, so we bought them directly through JetBlue. I loved flying with them, so I don't think I'll fly with another company again. The service was excellent and it took less than three hours to get from Boston to Orlando.
